Twice Cooked Cheesy Potatoes. I love these and they can be made the day before. This will fit in a 2 Qt. baking dish. 8 or 9 small to medium potatoes 2 pints heavy cream 1 cup shredded cheddar cheese seasonings of your choice Cook the potatoes in the skins. Peel when cool. Shred the potatoes in the baking dish. Stir in the cheese and seasonings. Pour the heavy cream over the top. Cover and let sit overnight in the refrigerator. Bake covered on 350 degrees F for 30 to 40 minutes. If you would like the top to get a little brown just take the lid off for the last 10 minutes of cooking.
